  • 0.5 cup butter melted
  • 1.5 teaspoons ground cinnamon 
  • tablespoons orange rind grated
  • cup pecans chopped
  • large sweet potatoes 
  • 0.8 cup water 
  • 10 servings yam variation

Directions

  1. Cook sweet potatoes in boiling water to cover 35 to 40 minutes or until tender.
  2. Let cool to touch; peel, and cut into 1/2-inch slices.
  3. Combine sugar, butter, cinnamon, and pecans. Arrange a layer of potatoes in a lightly greased 13- x 9- x 2-inch baking pan.
  4. Sprinkle half of sugar mixture over potatoes. Repeat layers.
  5. Add water, and sprinkle with orange rind.
  6. Bake at 350 for 35 minutes.
