Ingredients

  • 0.5 cup apple cider 
  • large braeburn cored cut into 1/2
  • cup firmly brown sugar light packed
  • cup butter 
  • 0.3 teaspoon salt 
  • pounds sweet potatoes peeled
  • teaspoon vanilla extract

Directions

  1. Cut sweet potatoes in half crosswise. Cook in boiling water to cover 10 minutes.
  2. Drain and cool.
  3. Cut crosswise into 1/2" slices.
  4. Combine brown sugar and next 3 ingredients in a medium saucepan. Bring to a boil; boil 10 minutes.
  5. Remove from heat; stir in vanilla.
  6. Layer sweet potato and apple slices in a greased 13" x 9" baking dish.
  7. Pour glaze over slices.
  8. Bake, uncovered, at 400 for 1 hour or until potatoes are candied and glaze is thickened, basting with glaze after 30 minutes.
