  • teaspoon bottled ground ginger fresh
  • 0.5 teaspoon kosher salt divided
  •  lime wedges 
  • 0.5 cup lower-sodium chicken broth fat-free
  • tablespoon lower-sodium soy sauce 
  • 0.5 cup peas green frozen thawed
  • pound pork tenderloin cut into 1-inch pieces
  • tablespoon rice vinegar 
  • 0.8 cup short-grain rice uncooked
  • 0.5 cup vidalia sweet chopped
  • cup water

Directions

  1. Combine 1 cup water, rice, and 1/4 teaspoon salt in a small saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes; remove from heat.
  2. Let stand 10 minutes; gently stir in peas and vinegar.
  3. Heat a medium skillet over high heat. Coat pan with cooking spray.
  4. Add pork; saut 5 minutes.
  5. Sprinkle with 1/4 teaspoon salt.
  6. Add onion and garlic; stir-fry 2 minutes. Stir in broth and next 5 ingredients (through anchovy); bring to a boil. Reduce heat; simmer 5 minutes or until slightly thick. Spoon 1/2 cup rice on each of 4 plates; top each serving with 1/2 cup pork mixture.
  7. Serve with lime wedges.
