Ingredients

  • 0.3 cup butter melted ()
  • 4.5 pounds carrots trimmed to 1/2 inch peeled
  • 0.3 teaspoon cayenne pepper 
  • 0.3 cup basil leaves fresh thinly sliced
  • 0.3 cup ginger fresh finely grated peeled
  • 0.3 cup mint leaves fresh thinly sliced
  • 0.5 teaspoon ground cardamom 
  • teaspoon ground cumin 
  • 0.3 teaspoon ground nutmeg 
  • 0.3 cup olive oil 
  • 0.8 cup pinenuts toasted
  • cup pomegranate molasses 
  • 0.8 cup pomegranate seeds

Directions

  1. Preheat oven to 375°F.
  2. Whisk 1/4 cup water, pomegranate molasses, and next 7 ingredients in large bowl to blend.
  3. Add carrots to pomegranate mixture and toss to coat. Divide carrots between 2 large rimmed baking sheets. Roast until carrots are tender and liquids are reduced to glaze, stirring twice and mixing in water by tablespoonfuls if needed to prevent burning, about 55 minutes. Season with salt and pepper. (Can be made 4 hours ahead.
  4. Let stand at room temperature. Rewarm in 375°F oven 10 minutes before serving.)
  5. Transfer carrots to platter.
  6. Sprinkle pomegranate seeds, pine nuts, basil, and mint over carrots and serve.

  8. Look for maroon, white, yellow, and red carrots at farmers' markets and include as many colors as you like. Or use regular carrots and thin parsnips.
