Ingredients

  • slice applewood-smoked bacon 
  • 2.5 tablespoons balsamic vinegar 
  • tablespoon brown sugar packed ()
  • teaspoon caraway seeds 
  • 0.5 teaspoon ground allspice divided (scant)
  • 0.5 cup low-salt chicken broth 
  • tablespoon olive oil 
  • cups cabbage red thinly sliced
  • 0.3 cup shallots sliced ( 2 medium)
  •  chicken breast halves boneless skinless

Equipment

  • aluminum foil

Directions

  1. Sprinkle caraway and 1/4 teaspoon allspiceon both sides of chicken breasts.
  2. Sprinklewith salt and pepper.
  3. Heat oil in large nonstick skillet overmedium heat.
  4. Add bacon; cook until crisp.
  5. Transfer to plate.
  6. Add chicken to drippingsin skillet; sauté until cooked through, about5 minutes per side.
  7. Transfer to plate; tentwith foil.
  8. Add cabbage, shallots, broth,vinegar, sugar, and 1/4 teaspoon allspice tosame skillet; cook over medium-high heatuntil liquid is reduced to glaze and cabbageis crisp-tender, 6 minutes.
  9. Mix in bacon.Season with salt and pepper. Slice chicken;divide chicken and cabbage between 2plates. Top with chives, if desired.
