  •  bay leaves 
  • 0.5 cup bell pepper strips green
  • 0.5 cup bell pepper strips red
  • 0.3 teaspoon pepper black
  • 14.5 ounce canned tomatoes undrained canned
  • tablespoon cider vinegar 
  • cups rice long-grain hot cooked
  •  garlic cloves minced
  • teaspoons olive oil 
  • 0.5 cup onion diced
  • cup peas green frozen thawed
  •  pimento-stuffed olives halved
  • pound shrimp deveined peeled

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat until hot.
  2. Add onion, bell peppers, and garlic; saut 3 minutes.
  3. Add vinegar and next 4 ingredients (vinegar through bay leaves); bring to a boil. Cover, reduce heat to medium, and cook 5 minutes.
  4. Add shrimp; cover and cook 4 minutes.
  5. Add peas; cover and cook 1 minute. Discard bay leaves.
  6. Serve with rice.
