  •  boston lettuce leaves 
  • 0.5 cup celery thinly sliced
  • 2.5 cups chicken breast cooked chopped ( 1 pound skinned, boned chicken breasts)
  • 1.5 teaspoons curry powder 
  • tablespoons cilantro leaves fresh chopped
  • cups wedges honeydew melon cubed peeled
  • 2.5 tablespoons juice of lime fresh
  • teaspoons lime rind grated
  • 0.3 cup mayonnaise reduced-fat
  • 1.8 cups mangos cubed peeled
  • 0.5 teaspoon salt

  1. Combine first 4 ingredients in a medium bowl.
  2. Combine mayonnaise and next 5 ingredients in a small bowl; stir well.
  3. Pour over chicken salad; toss gently to coat. Spoon onto four lettuce-lined plates.
  4. Serve immediately.
