  • teaspoons double-acting baking powder 
  • cup carrots cooled cooked mashed
  • 0.3 cup confectioners' sugar for decoration
  •  eggs 
  • cups flour all-purpose
  • tablespoons orange juice 
  • tablespoon orange zest 
  • 0.3 teaspoon salt 
  • 0.8 cup shortening 
  • 0.5 teaspoon vanilla extract 
  • 0.8 cup sugar white

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the sugar, shortening and the egg.
  3. Add cooked cooled mashed carrots, flour, baking powder, salt and vanilla.
  4. Mix well.
  5. Drop on greased cookie sheet and bake for 15 minutes.
  6. Combine orange juice with the grated rind of one orange.
  7. Add enough confectioners' sugar to thicken. Put on cookies while hot.
