  • 2.3 cups carrots chopped
  • 0.5 teaspoon ground coriander 
  • 0.3 cup milk 1% low-fat
  • cups d potatoes refrigerated mashed (such as Simply Potatoes)
  • 0.5 teaspoon salt 
  • teaspoons sugar

Directions

  1. Heat potatoes according to package directions. Keep warm.
  2. Cook carrot in boiling water 15 minutes or until tender.
  3. Drain.
  4. Place carrot, milk, and remaining ingredients in a food processor; process until smooth, scraping sides of bowl occasionally.
  5. Combine potatoes and carrot mixture in a large bowl, stirring until well blended.
