  • 10 ounce matchstick-cut carrots 
  • 0.1 teaspoon pepper black
  • tablespoons canola oil 
  • tablespoons flat-leaf parsley fresh chopped
  • tablespoons juice of lemon fresh
  • tablespoons maple syrup 
  • cup pineapple fresh diced
  • tablespoon pineapple juice fresh
  • 0.5 cup raisins 
  • 0.3 teaspoon salt

Directions

  1. Combine the first 3 ingredients in a large bowl.
  2. Combine oil and next 3 ingredients (through pineapple juice), stirring with a whisk.
  3. Add oil mixture to carrot mixture; toss well.
  4. Add parsley, salt, and pepper; toss well. Cover and chill.
