Ingredients
- 0.5 teaspoon baking soda
- 1.5 cups firmly brown sugar light packed
- 0.5 cup butter softened
- 1.5 cups carrots finely grated
- 2 large eggs
- 1.5 cups flour all-purpose
- 0.5 cup pecans finely chopped
- 0.5 cup raisins chopped
- 0.5 teaspoon salt
- 1 teaspoon vanilla extract

Directions
- Beat brown sugar and butter at medium speed with an electric mixer until creamy; add eggs and vanilla, beating well.
- Stir in flour, baking soda, and salt just until moistened; stir in raisins and carrot.

- Sprinkle with pecans.
- Bake at 350 for 30 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack, and cut into squares.
