  • 0.3 cup yogurt plain fat-free
  • teaspoon ginger fresh grated peeled
  • cup fuji apple chopped ( 1 medium)
  • tablespoon honey 
  • teaspoon juice of lemon fresh
  • 0.3 teaspoon lemon rind grated
  • 0.3 cup mayonnaise light
  • 0.3 cup cup heavy whipping cream sour low-fat
  • tablespoon pecans toasted chopped
  • 0.5 cup raisins 
  • 0.1 teaspoon salt

  1. Combine first 4 ingredients in a large bowl.
  2. Combine yogurt and remaining ingredients in a small bowl. Spoon over carrot mixture; toss gently to coat. Chill up to 2 hours.
