Ingredients

  • pounds carrots peeled
  • cup spring onion chopped
  • tablespoon ground coriander 
  • 0.3 cup juice of lemon fresh
  • cup oil-cured olives green pitted drained chopped
  • 0.3 cup olive oil extra virgin extra-virgin
  • slices cranberry-orange relish 
  • tablespoon orange zest grated
  • 16 servings parsley fresh italian

  2. Drain well.
