Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 1.5 pounds carrots shredded
  • tablespoons chives chopped
  • teaspoon pepper red crushed
  • 0.5 cup mayonnaise 
  • 0.3 cup pineapple chunks canned drained
  • cup raisins 
  • 0.5 teaspoon salt 
  • 0.3 cup sugar

Directions

  1. In a medium bowl, mix together the mayonnaise, pepper, salt and sugar. Stir in the carrots, raisins and pineapple chunks.
  2. Add the crushed red pepper, if desired. Top with the chives.
  3. Cover the slaw with plastic wrap and refrigerate for at least 30 minutes before serving, allowing flavors to meld.
