Ingredients
- 2.5 cups cabbage shredded
- 0.5 cup carrots shredded
- 3 tablespoons cider vinegar
- 0.3 cup parsley fresh chopped
- 0.3 cup green onions sliced
- 0.5 cup radishes thinly sliced
- 1 cup roasted cashews coarsely chopped
- 0.5 teaspoon salt
- 1 tablespoon spicy brown mustard
- 0.3 cup vegetable oil
- 2 tablespoons whipping cream
- 2 cups zucchini shredded

Directions
- Press zucchini between paper towels until barely moist.
- Combine zucchini and next 5 ingredients in a large bowl; toss well.
- Combine oil and whipping cream in a small bowl. Beat at high speed of an electric mixer until blended.

- Pour mixture over vegetables; toss gently. Cover and chill. Stir in cashews just before serving.
