Ingredients

  • 2.5 cups cabbage shredded
  • 0.5 cup carrots shredded
  • tablespoons cider vinegar 
  • 0.3 cup parsley fresh chopped
  • 0.3 cup green onions sliced
  • 0.5 cup radishes thinly sliced
  • cup roasted cashews coarsely chopped
  • 0.5 teaspoon salt 
  • tablespoon spicy brown mustard 
  • 0.3 cup vegetable oil 
  • tablespoons whipping cream 
  • cups zucchini shredded

Directions

  1. Press zucchini between paper towels until barely moist.
  2. Combine zucchini and next 5 ingredients in a large bowl; toss well.
  3. Combine oil and whipping cream in a small bowl. Beat at high speed of an electric mixer until blended.
  4. Add vinegar, mustard, and salt; beat well.
  5. Pour mixture over vegetables; toss gently. Cover and chill. Stir in cashews just before serving.
