  • pound bacon sliced
  • 0.5 cup butter 
  • tablespoons butter 
  • 1.5 pounds filets cut into 1 inch cubes
  • pounds filets fresh cut into large chuncks
  • 12 fluid ounce evaporated milk canned
  • 24 fluid ounce evaporated milk canned
  • servings parsley fresh chopped
  • tablespoons juice of lemon 
  • cups milk 
  • large onion chopped
  • teaspoons pepper 
  • medium potatoes diced peeled
  • cups potatoes diced peeled
  • 2.5 teaspoons salt 
  • servings salt and pepper to taste
  • cups water 
  • 0.5 cup milk whole

Directions

  1. Place bacon strips in a large stockpot over medium-high heat. Cook bacon until crisp, then remove to paper towels to drain.
  2. Drain grease from the pot, reserving about 1 tablespoon. Set heat to medium, and fry onions in the reserved bacon grease until tender, about 5 minutes.
  3. Add potatoes, and fill pot with just enough water to cover them. Bring to a boil, then cook until potatoes are almost tender, about 5 minutes.
  4. Add fish pieces, evaporated milk, whole milk, and butter. Bring to a boil, then simmer over low heat for 30 minutes. Season with salt and pepper to taste. Ladle into bowls, and top with crumbled bacon pieces.
