  • large heads belgian endive trimmed halved lengthwise thinly sliced
  • 15 ounce beans white drained canned (such as Great Northern or navy beans)
  • medium head cauliflower trimmed cut into small florets ( 3 cups)
  • ounces feta cheese crumbled
  • tablespoon chives fresh chopped
  • teaspoons parsley fresh chopped
  • teaspoon rosemary leaves fresh minced
  • 0.5 teaspoon pepper black
  • tablespoons juice of lemon fresh
  • 2.5 teaspoons lemon zest finely grated
  • 0.3 cup olive oil 
  • tablespoon red wine vinegar 
  • 1.5 teaspoons salt

Directions

  1. Combine oil and rosemary in small saucepan. Stir over medium heat just until fragrant, about 1 minute. Cool.
  2. Whisk lemon juice, vinegar, lemon peel, salt, and pepper in small bowl.
  3. Combine cauliflower, beans, endive, chives, parsley, and rosemary oil in medium bowl; toss.
  4. Mix in cheese.
  5. Add lemon juice mixture and toss to coat. Season salad with salt and pepper.
