Ingredients

  • 1.5 teaspoons capers drained
  • cups cauliflower florets ( 1 small head)
  • tablespoons parsley fresh chopped
  •  garlic cloves minced
  • 0.5  optional: lemon 
  • tablespoons juice of lemon 
  • teaspoons olive oil 
  • 0.3 teaspoon salt 
  • cups water

Directions

  1. Bring 6 cups water and lemon half to a boil in a large saucepan.
  2. Add the cauliflower to pan; cook 3 minutes.
  3. Drain; discard lemon half.
  4. Heat oil in a large nonstick skillet over medium heat.
  5. Add cauliflower to pan; cook 12 minutes or until soft, stirring occasionally.
  6. Add garlic; cook 30 seconds or until lightly browned.
  7. Transfer cauliflower mixture to a large bowl.
  8. Add parsley and the remaining ingredients; toss well.
