  • 2.5 pounds cauliflower cored cut into 1-inch florets
  • cup cherry tomatoes cut into 1/4-inch dice
  • 0.3 cup parsley fresh finely chopped
  • 1.5 tablespoons juice of lemon fresh
  • 0.3 cup olive oil extra virgin extra-virgin
  • 0.3 cup onion red chopped
  • 0.3 pound serrano ham thinly sliced cut into 1/4-inch pieces

Directions

  1. Cook cauliflower in a large pot of boiling salted wateruntil just tender, 4 to 6 minutes.
  2. Drain well in a colander, then transfer to a large bowl.
