Ingredients

  • heads and/or belgian endive white red separated
  • 30 servings golden and caviar black red
  • 30 servings additional chives fresh chopped
  • 0.3 cup chives fresh chopped
  • 30 servings ground pepper black
  •  hardboiled eggs shelled chopped
  • teaspoons juice of lemon fresh
  • pounds red-skinned potatoes halved
  • 0.3 teaspoon salt 
  • cups cup heavy whipping cream sour

Directions

  1. Combine first 5 ingredients in medium bowl.
  2. Add pepper to taste; stir to blend.
  3. Transfer to serving bowl.
  4. Sprinkle additional chives around edge of sauce. Steam potatoes in batches until just tender, about 12 minutes per batch. Cool. (Sauce and potatoes can be prepared 1 day ahead. Cover separately and chill.)
  5. Place bowl of sauce in center of platter. Arrange potatoes and endive on platter.
  6. Place dollop of red caviar in center of sauce.
  7. Place remaining caviar nearby.
