  • oz almonds lightly toasted sliced
  • 0.5 teaspoon baking soda 
  • 0.3 cup plus light
  • cup brown sugar light packed
  • 12 cups popped popcorn (2 bags popped)
  • teaspoon salt 
  • tablespoons butter unsalted
  • tablespoon vanilla extract 
  • tablespoons water

Directions

  1. Preheat oven to 25
  2. Combine first 5 ingredients in a small saucepan, and cook over medium heat, stirring until sugar dissolves. Bring to a boil; cook, without stirring, 8 minutes or until sugar reaches 260 on a candy thermometer.
  3. Remove from heat; quickly stir in baking soda and vanilla.
  4. Pour hot caramel over popcorn, add almonds, and quickly coat popcorn.
  5. Spread popcorn mixture on lightly greased baking sheets.
  6. Bake at 250 for 1 hour, stirring every 10 minutes.
  7. Remove from oven, and let cool. Store in airtight containers.
