Ingredients

  • 0.8 teaspoon pepper black
  • 1.5 lb celery root with a sharp knife and quartered peeled
  • 0.3 cup flat-leaf parsley fresh coarsely chopped
  • 0.3 cup olive oil 
  • 3.5 oz pecan halves cooled
  • 0.5 teaspoon salt 
  • tablespoons shallots finely chopped
  • tablespoons white-wine vinegar

Directions

  1. Finely chop two thirds of nuts. Coarsely grate celery root in a food processor fitted with medium shredding disk.
  2. Stir together vinegar, salt, and pepper in a large bowl until salt is dissolved, then add celery root, chopped nuts, parsley, and shallot and toss well.
  3. Drizzle salad with oil and toss again.
  4. Serve sprinkled with remaining pecans.
