  • 3.5 cups champagne 
  • of lemon zest 
  • large pears firm peeled (such as Bosc) (such as Seckel) (, slightly underripe pears work best)
  • teaspoon rosewater 
  • cup sugar 
  • 0.5  vanilla pod split
