Ingredients

  • 16 ounce tomato sauce canned
  • 2.5 cups rice hot cooked
  • pound extra-lean ground beef 
  •  garlic cloves minced
  • teaspoon penzey's southwest seasoning dried italian
  • ounces sharp cheddar cheese shredded divided reduced-fat
  • cups zucchini diced ( 3 small)

Equipment

  • frying pan
  • paper towels

Directions

  1. Cook beef in a large nonstick skillet over medium-high heat until browned; stir to crumble.
  2. Drain well.
  3. Wipe pan with paper towel. Coat with cooking spray; place over medium-high heat.
  4. Add zucchini and garlic; saut 5 minutes.
  5. Add beef, seasoning, and sauce; bring to a boil. Reduce heat; simmer 5 minutes.
  6. Remove from heat.
  7. Add 2/3 cup cheese; stir until cheese melts.
  8. Serve over rice.
  9. Sprinkle with 1/3 cup cheese.
