  • teaspoon butter 
  • 0.3 cup canadian bacon chopped
  • 0.3 teaspoon cream of tartar 
  • 0.3 teaspoon mustard dry
  • large egg whites 
  • large egg yolks 
  • ounce bread french
  • 0.3 cup chives fresh chopped
  • cups milk 1% low-fat
  • ounces cheddar cheese shredded reduced-fat
  • 0.5 teaspoon salt 
  • tablespoons shallots minced

Directions

  1. Preheat oven to 37
  2. Place bread in a food processor; pulse 10 times or until the coarse crumbs measure 4 cups. Set aside. Melt butter in a small skillet over medium heat; add shallot. Saut 3 minutes or until soft (do not brown); stir in salt.
  3. Combine shallot mixture, milk, and next 5 ingredients (through egg yolks) in a large bowl; stir well.
  4. Add 3 1/2 cups bread crumbs; stir until well-blended.
  5. Coat a 1 1/2-quart souffl dish with cooking spray; sprinkle remaining 1/2 cup bread crumbs over bottom and sides.
  6. Place egg whites and cream of tartar in a large bowl; beat with a mixer at high speed until stiff peaks form. Gently stir 1/4 egg-white mixture into shallot mixture; gently fold in remaining egg-white mixture. Spoon into souffl dish.
  7. Bake at 375 for 1 hour or until souffl is set.
  8. Serve immediately.
