Ingredients

  • 0.5 cup bulgur uncooked
  • 0.8 cup tomatoes chopped
  • 0.5 cup cucumber seeded chopped
  • ounces swiss cheese cubed
  • 0.3 cup ham smoked diced fully cooked
  • 0.3 cup parsley fresh chopped
  • tablespoons spring onion thinly sliced
  • tablespoon mint leaves dried fresh crushed chopped
  • tablespoons vegetable oil 
  • tablespoons juice of lemon 
  • 0.1 teaspoon salt 
  • 0.1 teaspoon pepper 
  • leaves lettuce

Directions

  1. Cover bulgur with cold water in bowl.
  2. Let stand 30 minutes; drain. Press out as much water as possible.
  3. Place bulgur, tomato, cucumber, cheese, ham, parsley and onions in glass or plastic bowl.
  4. Mix remaining ingredients except lettuce leaves; pour over bulgur mixture and toss.
  5. Cover and refrigerate at least 4 hours or overnight.
  6. Serve bulgur mixture on lettuce leaves.
