Ingredients

  • lb ground beef 80% lean (at least )
  • 0.5 cup onion chopped
  • 0.5 teaspoon salt 
  • 0.1 teaspoon pepper 
  • 0.8 cup rice medium-grain white uncooked
  • cup water 
  • medium zucchini cut into 1/4-inch-thick slices (2 cups)
  • cup tomatoes chopped
  • 19 oz tomato basil sauce canned
  • oz mozzarella cheese shredded

Directions

  1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
  2. Sprinkle with salt and pepper.
  3. Place rice and water in baking dish; stir to mix.
  4. Layer cooked beef, zucchini and tomato over rice.
  5. Pour soup over top.
  6. Cut 16x12-inch sheet of foil; spray with cooking spray. Cover dish with foil, sprayed side down.
  7. Bake 40 minutes. Uncover dish; sprinkle cheese over top.
  8. Bake uncovered 10 to 15 minutes longer or until edges are bubbly and cheese is lightly browned.
