Ingredients
- 2 cups broccoli florets fresh
- 1.3 cups chicken broth fat-free reduced-sodium
- 2 cups rice white instant uncooked
- 1 Tbsp oil
- 1 lb chicken breasts boneless skinless
- 4 oz velveetaâ cut into 1/2-inch cubes
- 4 oz velveetaâ cut into 1/2-inch cubes

Directions
- Heat oil in large nonstick skillet on medium heat.
- Add chicken; cook 6 to 7 min. on each side or until done (165F).
- Remove chicken from skillet; cover to keep warm.
- Add broth to skillet. Bring to boil.
- Stir in rice, broccoli and VELVEETA. Top with chicken; cover. Cook on low heat 5 min.
- Remove chicken from skillet. Stir rice mixture until VELVEETA is completely melted and mixture is well blended.
- Serve chicken with the rice mixture.
