Ingredients

  • cup black beans rinsed drained (from 15-oz can)
  • tablespoon butter 
  • 30  tortilla chips blue
  • cloves garlic finely chopped
  • leaves spring onion fresh chopped
  •  and orange peppers cut into thin strips
  • 1.5 cups rotisserie chicken cut shredded (from 2-lb chicken)
  • servings salsa 
  • oz sharp cheddar cheese shredded
  • tablespoon vegetable oil 

Equipment

  • aluminum foil

Directions

  1. Heat oven to 400F. Line cookie sheet with foil. Arrange tortilla chips on cookie sheet, overlapping slightly.
  2. In 10-inch skillet, heat oil over medium heat. Cook bell pepper in oil 3 to 4 minutes or until tender.
  3. Add butter and garlic, stirring until butter is melted.
  4. Add chicken. Cook 2 minutes or until thoroughly heated.
  5. Remove from heat; stir in beans. If desired, season to taste with salt and pepper.
  6. Spoon chicken mixture over chips.
  7. Sprinkle with cheese.
  8. Bake about 4 minutes or until cheese is melted.
  9. Sprinkle with cilantro and onions.
  10. Serve with salsa.
