Ingredients

  • box hash browns betty seasoned skillets®
  • cups water hot
  • tablespoons butter melted
  •  eggs slightly beaten
  • ounces monterrey jack cheese shredded
  • small jalapeno seeded finely chopped
  • 0.5 cup bell pepper red finely chopped
  • tablespoons flour all-purpose
  • 0.5 teaspoon salt 
  •  eggs 
  • 0.7 cup milk 
  • serving lettuce shredded
  • serving cream sour
  • serving pepper flakes sliced

Directions

  1. Heat oven to 375°F. Cover potatoes with water.
  2. Let stand 15 minutes; drain thoroughly. Toss potatoes, margarine and 1 egg. Press potato mixture on bottom and up side of ungreased pie plate, 9x1 1/2 inches.
  3. Bake 20 minutes.
  4. Reduce oven temperature to 350°F.
  5. Sprinkle half of the cheese, finely chopped chiles and bell pepper in potato crust; repeat. Beat flour, salt and 2 eggs until blended; stir in milk.
  6. Pour over cheese mixture.
  7. Bake about 35 minutes or until center is set and top is golden brown.
  8. Let stand 10 minutes before cutting.
  9. Garnish with shredded lettuce, sour cream and sliced chile peppers.
