Ingredients

  • lb ground beef 80% lean (at least )
  • tablespoon butter 
  • bag potatoes diced refrigerated with onions (1 lb 4 oz)
  • 14.5 oz tomatoes diced italian with herbs (or other variety), undrained canned
  • tablespoon seasoning italian
  • oz pizza cheese shredded (mozzarella and Cheddar cheeses)
  • tablespoons parsley fresh chopped

Directions

  1. In 12-inch nonstick skillet, cook beef over medium-high heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  2. Remove beef and drippings from skillet.
  3. Melt butter in same skillet.
  4. Add potatoes. Cover and cook over medium heat about 5 minutes, stirring occasionally, until almost tender. Stir in beef, tomatoes and pizza seasoning. Cook about 5 minutes, stirring occasionally, until thoroughly heated.
  5. Sprinkle with cheese and parsley. Cover and heat until cheese is melted.
