Ingredients

  • tablespoon balsamic vinegar 
  • 0.3 teaspoon pepper black freshly ground
  • 0.3 cup kalamata olives pitted chopped
  • tablespoons parmesan cheese fresh grated
  • ounces part-skim mozzarella cheese shredded
  • 16 ounce polenta cut into 12 slices
  • ounce roasted bell peppers red drained sliced
  • cups tomato-and-basil pasta sauce (such as Muir Glen)

Directions

  1. Preheat oven to 35
  2. Combine first 5 ingredients in a medium saucepan. Bring to a simmer over medium heat, and cook 10 minutes, stirring sauce occasionally.
  3. Spread 1/2 cup sauce in bottom of a 13 x 9-inch baking dish coated with cooking spray. Arrange the polenta slices over the sauce, and spread remaining sauce over polenta.
  4. Sprinkle with cheeses.
  5. Bake casserole at 350 for 20 minutes or until bubbly.
