  • 0.3 teaspoon pepper black
  • large egg whites 
  • large eggs 
  • 0.3 cup basil fresh chopped
  • 0.5 cup bell pepper green chopped
  • 0.5 cup green onions finely chopped
  • teaspoon olive oil 
  • ounce parmesan cheese fresh grated
  • ounces part-skim mozzarella cheese shredded
  • 0.1 teaspoon salt 
  • 1.5 cups zucchini thinly sliced

Directions

  1. Preheat oven to 47
  2. Combine first 8 ingredients in a bowl; stir well with a whisk.
  3. Heat oil in an ovenproof medium skillet over medium-high heat.
  4. Add zucchini and bell pepper; saut 5 minutes.
  5. Add egg mixture. Reduce heat to low; cook 5 minutes or until set around edges.
  6. Remove pan from heat.
  7. Bake at 475 for 8 minutes or until center is set.
  8. Cut into 4 wedges.
