  • 0.8 teaspoon pepper black
  • oz cherries dried sour
  • stick cinnamon (2- to 3-inch)
  • teaspoons cornstarch 
  • 0.8 cup wine dry red
  • 0.7 cup port wine 
  • teaspoons red-wine vinegar 
  • tablespoons sugar

Directions

  1. Bring cherries, Port, wine, sugar, cinnamon stick, pepper, and a pinch of salt to a boil in a 1-quart heavy saucepan over moderate heat. Stir together cornstarch and vinegar until smooth, then stir into boiling liquid. Boil 1 minute.
  2. Remove from heat and cover, then let stand 15 minutes.
  3. Serve warm.
  4. Compote can be made 2 days ahead and cooled completely, uncovered, then chilled, covered. Bring to room temperature before using.
