  • 2.3 teaspoons gelatin powder unflavored (from 2 envelopes)
  • cups cup heavy whipping cream 
  • 10 tablespoons sugar divided
  • 0.5 teaspoon vanilla extract 
  • cup milk whole divided

  1. Pour 1/4 cup milk into small microwave-safebowl.
  2. Sprinkle gelatin over; stir to blend.
  3. Let stand 5 minutes to soften gelatin.
  4. Heat cream, 5 tablespoons sugar, andremaining 3/4 cup milk in small saucepanover medium heat just until bubbles beginto form around edge of pan, stirring todissolve sugar. Stir in almond extract andvanilla extract.
  5. Heat gelatin mixture in microwave onlow power until gelatin dissolves, stirringevery 15 seconds, about 45 seconds. Stirgelatin mixture into warm milk mixture.
  6. Letstand 20 minutes, stirring every 5 minutes.Divide mixture among eight 3/4-cup glassesor compote dishes. Cover each with plastic;chill until set, about 4 hours. DO AHEAD: Canbe made 2 days ahead. Keep chilled.
  7. Stir almonds and 1 tablespoon sugarin small nonstick skillet over medium-highheat until nuts are toasted and sugar meltsand coats nuts, stirring constantly, about 2minutes.
  8. Transfer candied almonds to plateto cool, stirring occasionally.
  9. Place cherries, almond liqueur (ifusing), and remaining 4 tablespoons sugarin medium bowl; toss to coat.
  10. Let standuntil sugar dissolves and juices form,stirring occasionally, about 20 minutes.Divide cherries with juices among glasses.
