Ingredients

  • 0.5 teaspoon baking soda 
  • cups rolled oats 
  • 0.3 cup brown sugar packed
  • 0.3 cup canola oil 
  •  eggs 
  • 0.5 cup granulated sugar 
  • 0.3 teaspoon ground cinnamon 
  • 0.3  salad dressing reduced-fat
  • 0.3 cup nuts mixed (peanuts, almonds, pistachios, pecans, hazelnuts)
  • 0.5 teaspoon salt 
  • teaspoon vanilla 
  • 0.8 cup flour whole wheat

Directions

  1. Heat oven to 350F. Spray cookie sheet with cooking spray.
  2. In medium bowl, mix oil, sugars, mayonnaise, vanilla and egg with spoon. Stir in barley, flour, baking soda, salt and cinnamon. Stir in nuts.
  3. Drop dough by rounded measuring tablespoonfuls 2 inches onto cookie sheet.
  4. Bake 10 to 14 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheet to cooling rack.
