  • teaspoons cajun spice salt-free
  • 29 ounce tomatoes diced with onion and green peppers, undrained canned
  • tablespoon cooking oil 
  • cup celery chopped
  • 0.5 teaspoon thyme dried
  • tablespoons parsley fresh chopped
  •  garlic minced
  • cup bell pepper green chopped
  • tablespoon hot sauce 
  • 14 ounce beef broth fat-free canned
  • cups onion chopped
  • ounce rice long-grain
  • pound shrimp deveined peeled
  • pound chicken breast boneless skinless cut into 1-inch pieces
  • 0.8 pound chicken thighs boneless skinless cut into 1-inch pieces
  • ounces turkey kielbasa halved cut into 1/4-inch-thick slices

Directions

  1. Heat a large skillet over high heat.
  2. Add oil to pan; swirl to coat.
  3. Add chicken; cook 4 minutes, stirring occasionally.
  4. Place chicken in an electric slow cooker.
  5. Add onion, bell pepper, celery, and garlic to pan; saut 4 minutes or until tender.
  6. Add onion mixture, turkey kielbasa, and next 5 ingredients (through chicken broth) to slow cooker. Cover and cook on LOW for 5 hours.
  7. Cook rice according to package directions.
  8. Add cooked rice and remaining ingredients except parsley garnish to slow cooker. Cover and cook on HIGH 15 minutes or until shrimp are done.
  9. Garnish with parsley leaves, if desired.
