  • 6-inch corn tortillas ()
  •  garlic cloves minced
  • tablespoon green onions chopped
  • 0.3 cup cup heavy whipping cream sour low-fat
  • 1.3 ounces monterrey jack cheese shredded with jalapeño peppers
  • 1.3 cups onion chopped
  • 10 ounce pkt spinach fresh trimmed
  • 1.3 ounce 0%-less-sodium taco seasoning mix 
  • 0.3 cup tomatoes chopped
  • cup water

Directions

  1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
  2. Add onion; cook 5 minutes or until lightly browned.
  3. Add garlic; cook 30 seconds, stirring constantly.
  4. Add spinach and next 3 ingredients; cook, uncovered, 20 minutes or until spinach wilts and most of the liquid is absorbed.
  5. Heat tortillas according to package directions.
  6. Place about 1/2 cup chicken mixture on each tortilla. Top each with 1 tablespoon each of cheese, tomato and sour cream, and 1 teaspoon green onions.
