  • slices bacon smoked chopped

  • 15 ounce beans white organic rinsed drained canned
  • tablespoons parsley fresh chopped
  •  garlic clove minced
  • cups beef broth fat-free
  • 0.5 cup onion chopped
  • tablespoons oregano fresh chopped
  • 0.7 cup orzo pasta (rice-shaped uncooked
  • cup plum tomatoes chopped
  • 0.3 teaspoon salt 
  • 12 ounces chicken thighs boneless skinless trimmed cut into 2-inch pieces
  • cups water 
  • tablespoon citrus champagne vinegar

Directions

  1. Cook bacon in a large saucepan over medium heat 7 minutes or until crisp.
  2. Remove bacon from pan, reserving drippings in pan; set bacon aside.
  3. Add chicken to drippings in pan; saut 6 minutes.
  4. Remove chicken from pan.
  5. Add onion and garlic to pan; cook 4 minutes or until tender.
  6. Add tomato, oregano, and pepper; cook for 1 minute, stirring constantly. Return bacon and chicken to pan. Stir in 2 cups water and broth, scraping pan to loosen browned bits. Bring to a boil.
  7. Add orzo, and cook for 9 minutes or until al dente.
  8. Add beans; cook 2 minutes or until heated.
  9. Remove from heat; stir in parsley, vinegar, and salt.
