Ingredients

  • slices bacon diced
  • cup carrots chopped
  • lb pasta 
  •  spring onion sliced
  • cup peas sweet frozen (from 12-oz bag)
  • cup ranch dressing 
  • lb chicken breast boneless skinless cut into 1-inch pieces
  • large tomatoes diced

Equipment

  • bowl
  • frying pan
  • paper towels

Directions

  1. In large skillet, cook bacon until crisp; drain on paper towels. In bacon drippings, cook chicken over medium-high heat about 5 minutes, stirring occasionally, until no longer pink in center.
  2. Remove from heat; cool.
  3. Meanwhile, cook pasta as directed on package, adding peas and carrots during last 3 minutes of cooking time.
  4. Drain; rinse with cold water to cool.
  5. In large bowl, toss bacon, chicken and onions.
  6. Add pasta, peas and carrots.
  7. Add dressing; toss to combine.
  8. Garnish with tomato.
  9. Serve immediately or cover and refrigerate until serving time.
