  • tablespoon teaspoon basil dried fresh chopped
  • 0.7 cup breadcrumbs soft
  •  skinned and boned chicken breast halves 
  • 0.3 cup feta cheese crumbled
  • slices garnishes: lemon basil sprigs 
  • tablespoons juice of lemon 
  • tablespoons olive oil 
  • 0.3 teaspoon pepper 
  • 0.3 teaspoon salt 
  • servings tomato-basil cream

Directions

  1. Stir together first 5 ingredients in a shallow bowl.
  2. Whisk together olive oil and lemon juice until blended. Dip chicken into olive oil mixture, and dredge in breadcrumb mixture, pressing to coat.
  3. Place in a lightly greased 11- x 7-inch baking dish.
  4. Bake at 375 for 30 minutes or until chicken is done.
  5. Serve with Tomato-Basil Cream; garnish, if desired.
