Ingredients

  • 14.5 ounce canned tomatoes diced canned
  •  carrots chopped
  • stalks celery chopped
  • cup chicken broth 
  • 10.8 ounce cream of chicken soup canned
  • 10.8 ounce cream of mushroom soup canned
  • 0.3 teaspoon sage dried
  • clove garlic minced
  •  onion chopped
  • servings salt and pepper to taste
  •  chicken breast halves boneless skinless cut into cubes

Directions

  1. Spray a large skillet with cooking spray.
  2. Saute the chicken in the oil.
  3. Add the onion and saute until translucent.
  4. Add the celery and carrots and saute briefly.
  5. Add the chicken soup, mushroom soup, water or broth, salt and pepper, sage and garlic. Do not add the tomatoes yet as they retard cooking time. Bring all to a boil, then cover and simmer for about 20 minutes.
  6. Add the tomatoes and simmer for 10 more minutes, uncovered.
  7. Serve over hot cooked rice if desired. Delicious!
