  • tablespoons cilantro leaves fresh minced
  • 0.5 teaspoon ground cumin 
  • 1.5 tablespoons pickled jalapeño peppers minced
  • tablespoons olive oil 
  • medium onion sliced
  •  bell pepper red cut lengthwise into 1/2
  • cups rotisserie chicken cut shredded cooked
  • servings toppings: salsa sour
  • 0.5 teaspoon salt

Directions

  1. Heat 2 Tbsp. olive oil in a large skillet over medium heat.
  2. Add bell pepper and next 3 ingredients. Cook 8 minutes or until pepper and onion are tender, stirring often.
  3. Add chicken, cilantro, and jalapeo peppers; cook 2 minutes or until thoroughly heated.
  4. Remove from heat, and keep warm.
  5. Warm tortillas according to package directions.
  6. Transfer chicken mixture to a serving platter.
  7. Serve with tortillas and desired toppings.
