Ingredients

  • cups brown rice from stuffed peppers cooked
  • tablespoons ginger fresh grated
  • cloves garlic minced
  • 0.3 cup soya sauce low-sodium
  •  onion halved sliced
  • pound stir-fry vegetables frozen dry thawed
  • pound chicken breast boneless skinless cut into 1-inch pieces
  • tablespoons vegetable oil

Directions

  1. Toss chicken with 1 Tbsp. soy sauce.
  2. Place a large skillet over high heat.
  3. Add 1 Tbsp. oil, then onion; stir-fry until onion starts to brown, about 1 minute.
  4. Add chicken; stir-fry until cooked through, 5 to 6 minutes.
  5. Transfer mixture to a bowl.
  6. Add 1 Tbsp. oil to skillet. Stir-fry vegetables for 2 minutes.
  7. Transfer to bowl with chicken.
  8. Add 1 Tbsp. oil, garlic and ginger to skillet; stir-fry for 30 seconds.
  9. Add rice; cook for 2 minutes.
  10. Add chicken, vegetables and remaining soy sauce; cook 1 minute longer.
  11. Serve immediately.
