Ingredients

  •  carrots peeled diagonally sliced
  • 0.3 cup cashew pieces 
  • stalks celery chopped
  • tablespoon cornstarch 
  • teaspoon ginger root fresh minced
  • 0.3 cup green onions minced
  • tablespoon honey 
  • tablespoons soya sauce light
  • 0.8 cup orange juice 
  • teaspoons vegetable oil; peanut oil preferred 
  • 1.5 pounds chicken breast halves boneless skinless cut into strips

Directions

  1. Heat 1 teaspoon of the oil in a wok over high heat.
  2. Add the carrots and celery and stir fry for 3 minutes.
  3. Add remaining 1 teaspoon oil, then add the chicken and stir fry for 5 more minutes.
  4. In a small bowl, dissolve the cornstarch into the orange juice.
  5. Mix in the soy sauce, honey and ginger.
  6. Add this sauce to the wok and cook over medium heat until thickened. Top with the cashews and green onions.
