  • 0.3 cup creamy peanut butter 
  • medium cucumber seeded thinly sliced
  • tablespoons sesame oil dark
  • servings cilantro leaves fresh chopped
  • tablespoon ginger fresh minced peeled
  • 0.3 cup spring onion thinly sliced
  • tablespoons honey divided
  • tablespoons soy sauce divided
  • tablespoon vegetable oil; peanut oil preferred 
  • tablespoons rice vinegar divided
  • pound chicken breast boneless skinless cut into 1 1/2-inch pieces
  • ounces soba noodles uncooked
  • 0.3 teaspoon sugar 
  • tablespoons water

Directions

  1. Cook noodles according to package directions, omitting salt and fat; drain and rinse with cold water.
  2. Drain.
  3. Combine 2 tablespoons vinegar, sesame oil, 1 tablespoon honey, and sugar in a large bowl, stirring with a whisk.
  4. Add the noodles, onions, and cucumber; toss to combine.
  5. Combine remaining 1 tablespoon honey, 1 tablespoon soy sauce, ginger, and peanut oil in a medium bowl, stirring with a whisk.
  6. Add chicken to bowl; toss to coat. Thread chicken evenly onto 4 (10-inch) skewers.
  7. Heat a grill pan over medium-high heat. Coat with cooking spray.
  8. Add kebabs to pan; cook 12 minutes or until done, turning to brown all sides.
  9. Combine remaining 1 tablespoon vinegar, remaining 1 tablespoon soy sauce, peanut butter, 2 tablespoons water, and sambal oelek in a medium bowl, stirring with a whisk.
  10. Drizzle mixture over chicken.
