Ingredients

  • 0.3 cup avocado chopped
  • tablespoon cilantro leaves fresh chopped
  • 0.3 teaspoon garlic minced
  • teaspoon garlic minced
  • tablespoon green onions chopped
  • teaspoon jalapeno finely chopped
  • tablespoons juice of lime fresh
  • teaspoons soya sauce low-sodium
  • 0.8 pound chicken breast halves boneless skinless cut into 1-inch pieces
  • 0.8 cup tomatoes seeded chopped

Directions

  1. Combine first 7 ingredients. Cover and chill.
  2. Place chicken in a shallow dish.
  3. Combine 2 tablespoons lime juice, soy sauce, and garlic.
  4. Pour over chicken. Cover and marinate in refrigerator 1 hour.
  5. Prepare grill.
  6. Remove chicken from marinade, reserving marinade.
  7. Place marinade in a small saucepan; bring to a boil, and remove from heat. Thread chicken onto 2 (10-inch) skewers.
  8. Place chicken on grill rack coated with cooking spray; grill, covered, 6 to 8 minutes or until chicken is done, turning occasionally, and basting with reserved marinade.
  9. Spoon tomato mixture onto a serving plate; place chicken kebabs over tomato mixture.
