  • tablespoon canola oil 
  • tablespoons cilantro leaves chopped
  • 0.3 cup cucumber english chopped
  • tablespoons juice of lime fresh
  •  cabbage leaves 
  • tablespoons curry paste red
  • 0.5 teaspoon salt 
  • 0.3 cup shallots finely chopped
  • pound chicken breast halves boneless skinless

  • frying pan

Directions

  1. Combine curry paste, chicken, and salt in a food processor; process until smooth.
  2. Heat a large skillet over medium-high heat.
  3. Add oil to pan; swirl to coat.
  4. Add chicken to pan; saut 6 minutes or until done, stirring to crumble.
  5. Remove pan from heat; stir in cucumber and next 3 ingredients (through juice).
  6. Place 2 cabbage leaves on each of 4 plates; divide chicken mixture evenly among leaves.
  7. Serve with chile paste, if desired.
