  • slices oscar mayer bacon chopped
  • 0.5 cup baked tortilla chips crushed
  • cups brown rice long-grain cooked
  • 0.3 cup knudsen cream light sour
  • cups grape tomatoes 
  • small onion chopped
  • 0.5 cup taco bellâ® & chunky salsa thick
  • 0.5 cup milk sharp cheddar cheese shredded 2% kraft
  • lb chicken breasts boneless skinless

Equipment

  • paper towels
  • oven
  • aluminum foil

Directions

  1. Heat oven to 400F.
  2. Place chicken on foil-covered baking sheet; top with salsa.
  3. Bake 20 min. or until chicken is done (165F), topping with crushed chips and cheese for the last 5 min.
  4. Meanwhile, cook bacon in large skillet until crisp.
  5. Remove bacon from skillet; drain on paper towels. Discard drippings from skillet.
  6. Add onions to skillet; cook and stir 5 min. Stir in tomatoes; cook 4 to 5 min. or until tomatoes begin to pop, stirring occasionally.
  7. Add rice; cook 2 to 3 min. or until heated through, stirring occasionally. Stir in bacon.
  8. Top chicken with sour cream.
  9. Serve with rice mixture.
