Ingredients

  • ounce round of président brie 
  • tablespoons cilantro leaves chopped
  • 8-inch flour tortilla fat-free ()
  • tablespoons garlic fresh minced
  • 0.3 cup spring onion chopped
  • 0.1 teaspoon ground cumin 
  • 0.1 teaspoon ground pepper red
  •  jalapeno minced seeded
  • tablespoon juice of lemon fresh
  • tablespoon olive oil 
  • teaspoons olive oil 
  • 0.8 cup pears chopped
  • 0.5 cup plum tomatoes chopped
  • tablespoons onion red minced
  • cups chicken breast boneless skinless chopped

Directions

  1. Preheat oven to 40
  2. Heat a large skillet over medium-high heat. Coat with cooking spray.
  3. Add chicken; saut chicken 4 minutes.
  4. Add garlic and minced jalapeo; saut 2 minutes. Stir in chopped tomato and green onions.
  5. Brush 1 tablespoon olive oil over a jelly-roll pan; arrange tortillas on pan.
  6. Spread Brie cheese over half of each tortilla; top with about 1/3 cup chicken mixture.
  7. Bake at 400 for 5 minutes. Fold each tortilla in half.
  8. Bake 12 minutes, turning once.
  9. Combine pear, cilantro, red onion, lemon juice, 2 teaspoons olive oil, cumin, and red pepper.
  10. Serve with quesadillas.
